Montsalvat is an artist's colony located in Eltham, Victoria, Australia. It is one of the oldest continuously active artist communities in Australia. Montsalvat was founded by Justus Jörgensen, an Australian artist, in 1934.

The name "Montsalvat" is derived from the legendary castle "Montsalvat" in the Arthurian tales, which was the location of the Holy Grail. Justus Jörgensen aimed to create an artistic utopia, and he designed and built many of the buildings on the site himself.

Montsalvat is known for its distinctive medieval architectural style and beautiful gardens, making it an enchanting and unique place for artists to live and work. Over the years, it has attracted many artists from various disciplines, including painters, sculptors, writers, and musicians.

The food and beverage experience within Montsalvat is not only a important part of the visitor experience it is also a key commercial part of the operating model. The current food and beverage services include a onsite cafe and functions facilities.

Café/Restaurant

There is an existing café facility, which Montsalvat is keen to expand and install and a new concept that will have longer trading hours and appeal to the local community. The Cafe kitchen is available to be utilized for both public-facing F&B and as a catering hub, located near the Barn Gallery space.
